We’ve got another bank holiday coming up – and this time it starts on a Thursday.

So we can shut up shop on Wednesday and enjoy the best of the beautiful (fingers crossed) early British summer.

But what to do over the four days? We’ve got a wide array of coffee-related options for you to enjoy over this one-off holiday.

Cocktails

So what’s the most appropriately named cocktail to enjoy on a June evening when the sun sets around 10pm?

Probably not a Dark & Stormy. But we’ve got a delicious coffee twist on the traditional rum cocktail – the perfect refresher on a sunny afternoon.

Ingredients

- 50ml dark rum

- 100ml ginger beer

- 2 lime slices

- Ice

- Freshly brewed Bourbon Cream espresso

Method

  1. Add ice to a highball glass.
  2. Muddle the lime with the ice. Put a bit of elbow grease in here – you want to get both the juice and zesty oils.
  3. Top up with ginger beer and allow to settle
  4. Add your Bourbon Cream espresso. A double shot will do two cocktails.
  5. Garnish with your second slice of lime.

Not drinking alcohol or looking for something refreshing to enjoy during the day? Check out our Japanese iced coffee recipe.

Get baking!

Looking for something to take to a Jubilee street party? Or perhaps you just want to enjoy something indulge in with a good book and a cup of our Jubilee edition coffee.

We’ve got a recipe for a deliciously decadent coffee-and-chocolate cake with a dairy-free alternative to boot. And don’t miss a chance to reduce waste and taste something great with our coffee-ground brownie recipe from last month.

Go sightseeing

Key account manager Jackson regularly travels the country to give tips and training to baristas. So we asked him for his pick of the picturesque cafés to stop at for your coffee when you’re enjoying the great outdoors this weekend – all brew with Pact beans.

“If you’re braving an inevitably busy Windsor over the Jubilee weekend, don’t miss Cinnamon Café. It’s a stone’s throw from the castle and has a wide range of delectable cakes to enjoy.

Looking to enjoy the great British seaside? Don’t miss Leigh-on-Sea’s Barlow and Fields. And if you’re off to get lost in the great Epping Forest, be sure to stop at The Larder, Butler’s Retreat, which is a Grade II listed building, for a much-needed mid-adventure caffeine kick.

If you’re soaking up some art in Tate Modern, make sure to take a pit-stop at Chealsons Coffee Cab and take in the sunny Southbank while enjoying something delicious.”

Whatever you’re doing over the four days, we hope you have a great bank holiday.
